So to buy stuff with redemption cash... two questions:

1. Do I just send the redemption cash with a note and address saying what I want and who to send it to?

2. If it's over 50 and less than 100 in redemption cash, is that $5 or $10 in shipping?

+1, Justin.  It never hurts to email Rob prior to sending your order to confirm that you have everything right.  You're a lot more likely to find the answers your looking for and he's typically really good about replying to email.
